Meatless Meals

I am making an effort to make meatless dinners at least half of the week.  My kids eat meat at school, so I am trying to add more of a variety in our diets.  So far, we have tried:  baked potato bar, stuffed peppers, stir fry, and nachos.



I am trying to incorporate beans for protein.  Beans are also more inexpensive to buy than meat, so this is saving us money.

My kids are having mixed feelings about some of the new veggies.  They love veggies and fruits, but prefer to stick to the ones that they know.  Peppers in particular haven't gone over well yet.  They can't get over the name and assume it will be spicy.
