Rice Cake with Peanut Butter and Dried Apricots
Tonight's dinner was 2 rice cakes covered in peanut butter and dried apricots. It's very good and meets 4 out of the 5 major food groups. The only thing missing is a dairy product. This was my standby quick lunch that I made quite a bit when I was working. I also mix it up with fresh fruit or different dried fruits and especially like it with dried cranberries.
My dad spent time with my kids this evening. He made them macaroni and cheese for dinner. I admit that I do give them this at times, but I make sure to give them chicken nuggets and fruits or vegetables to go with. My dad just gave them macaroni and milk. It is a warm night, so I just wanted a light dinner and to supplement my kids' dinner with something healthy.
