Fajitas are one of my and my family's favorite foods. I love bell peppers, raw or cooked. My husband tolerates them cooked only. Up until now, my kids have refused to eat bell peppers. They've been convinced that because of the name of "peppers," they have to be spicy.
I am trying to serve more and a variety of vegetables to my family. Fajitas is a good option for this. Even with sour cream, it is low in fat and has every food group. However, my kids were only willing to eat everything except for the peppers, so they were not getting these nutrients.
Last time I made them, I tried giving them their portions of the peppers raw. They like raw peppers! It's a compromise to remember to give them half of the peppers raw and then cook the rest, but at least they're eating them now. I know that many vegetables have more nutrients in the raw form, so they may even be getting more nutrients than my husband and I!
