Low Carb Veggie Saute


For dinner tonight, I made a veggie saute to go with meatloaf and mashed potatoes.  I make it with whatever veggies that we happen to have on hand.  Tonight's saute had:  beets, rutabagas, carrots, collard greens, and onions.  In making this as an experiment one night, I discovered that I like beets.  I had never had them before.  They have a slight sweet taste to them, so it appeals to the kids, too!

30 Day Squat Challenge


I've been hearing about the 30 Day Squat Challenge from some of my friends on Facebook lately, so I decided to give it a try.  Today was only day 1, so we'll see how it goes.  I was going to wait until at least day 4 (the first rest day) to blog about it, but I decided that I'll be more likely to stick with it if I announce that I'm officially doing it.  If that makes sense at all.

"Hot" Yoga

I'm not sure that I could ever take a Hot Yoga class.  While the hubby ran to the store last night, I decided to get some stretching in and did my Yogalates DVD.  It was 90+ degrees in my house, even with the large fan blowing directly on me.  It was a very sweaty half hour.

I enjoy doing yoga and Pilates, which makes the Yogalates DVD a great choice.  I have always wanted to try a hot yoga class, but I'm not a big fan of such hot temperatures.  I wonder if they offer a Cold Yoga class...
